Ingredients
  • 4 chicken breasts (boneless, skinless)
  • 2 cans of chipotle peppers (in adobo sauce)
  • 1 onion (finely chopped)
  • 4 cloves garlic (minced)
  • 1 lime (juiced)
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper (to taste)
  • 2 tbsp olive oil
Instructions
  1. Marinate the Chicken: In a blender, combine the chipotle peppers, garlic, lime juice, cumin, and paprika. Blend until smooth. Pour the marinade over the chicken breasts and let them marinate for at least 2 hours.
  2. Preheat the Grill: Preheat your grill to medium-high heat.
  3. Cook the Onions: In a skillet, heat the olive oil and sauté the onions until translucent.
  4. Grill the Chicken: Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until fully cooked.
  5. Combine and Simmer: Add the grilled chicken and sautéed onions to the remaining marinade. Simmer for 10 minutes to allow the flavors to meld.
